I Don’t Really Bake…

It’s obvious that I love food.  And I do like to cook, on occasion.  But the art of baking is just not my strong suit.  It could be due to the fact that I’m working with a 1950s GE oven that doesn’t exactly heat evenly, or it could just be the time involved with baking that I don’t have the patience for.  In any case, this morning I rolled up my sleeves, put on my apron (not really) and whipped up some breakfast… Blueberry Muffins, using a boxed mix.

IMG_20160703_103341-1Now the reason I’m excited about this, is because I found a mix that seems not only healthy, but let’s me put my own spin on the recipe (which I often do anyway).  The secret ingredient is “Krusteaz Organic Whole Grain Muffin Mix” – sounds perfect, right?  And it is!  A plain, health-conscious batter that you can doctor up any way you like & call it your very own.  All it takes is 2 eggs, a little oil & some milk (and you can even substitute the oil with applesauce if you’re really on the wagon).  Then you simply add whatever you like… fruit, nuts, etc., and voila… you’ve created your very own specialty muffin.  By the way, if I have to crack eggs & measure ingredients, that’s certainly baking to me.

So this morning, we happen to have an overabundance of fresh-picked blueberries from a farm share that we belong to (www.honeybrookorganicfarm.com) which spawned this whole endeavor.  We decided to add a little organic, unsweetened coconut to the mix for fun… and the result?  Some of the best damn muffins I’ve ever had.  That I “baked” myself. 🙂

 

Water Park Fun on Jekyll Island, GA

Located just about an hour north of Jacksonville, FL, on tiny Jekyll Island, you’ll find “Summer Waves“… a perfectly sized, very clean water park, with enough attractions to keep everybody entertained for the day.

20160625_133545-1The park features a wave pool, lazy river, 2 splash parks (one for bigger kids & one for little tikes), and 4 water slides of varying intensity.  There are plenty of shady spots with lounge chairs to set up camp and although you can’t bring in your own food, “Larry’s Giant Subs” offers a fairly diverse, reasonably priced menu.  There are also several snack shacks, lockers, showers & changing areas plus a decent Surf/Gift Shop for anything you may have forgotten.

On a Saturday, at the very start of summer, it wasn’t too, too crowded, but I can imagine at peak times of the season, it can get a little overwhelming.  I’d recommend getting there early to secure a good spot and hit the big water slides first to avoid the lines that seem to build as the day goes on.  For park hours, click HERE.

My 10-year old had a blast and “Grandpa” survived multiple trips with him down the water slides, while “Grandma” & I opted for the wave pool & lazy river 🙂

Babies in the Back?

plane.jpgTaking a baby on an airplane seems to be the thing parents fear most when traveling. What happens if they cry? Or they don’t sleep? What about their ears? I faced all of these fears on my son’s first flight to Florida when he was just over 2 months old, but I went for it & with a little bit of prep, everything went smoothly.

My first piece of advice is this… When flying with infants or young toddlers, book your seats as far in the back of the plane as possible (the last row is truly ideal). This gives you the most privacy if you’re nursing, you won’t have the entire plane watching you if your child starts crying or acting up and if you need to walk around a bit to calm your baby down, you’ll have more space & less of an audience. It also keeps you closest to the bathroom for clean-ups & closest to the kitchen for heating bottles, rinsing cups, getting extra snacks, etc.

I also remember being really concerned about my little one’s ears. Since they can’t “yawn” or chew gum to keep to keep their ears clear, plan to nurse or give a bottle during take-off and landing when the cabin pressure changes the most severely. The sucking keeps the babies ears regulated and avoids the painful “popping” that can occur at these times. Even a pacifier will do the trick. For older kids, a lollipop works wonders.

There are a few items you should definitely pack to ensure a smooth experience…
– An extra change of baby clothes (in case of an unexpected “explosion”)
– Ziplock baggies (perfect for dirty diapers, soiled clothes or anything “wet”)
– A large, tumbler-style cup (have the flight attendant fill it with hot water before you take off and drop your bottle or food in it for heating)
–  Wipes… and more wipes!  Good for everything from wiping down the armrests to cleaning up the baby.
–  Favorite blanket or stuffed animal (or whatever item comforts them to sleep)
–  Baby Benadryl or Tylenol (as a last resort… and I say this jokingly, however it’s sometimes a necessity if they have any kind of congestion, allergy or teething pain that can be accentuated by the cabin pressure.)

Being prepared for every scenario is obviously a good strategy, but don’t go into it fearing the worst. Flying is amazing and the staff & crew are usually more than happy to help you out. The key is to start early and get them used to the process – in fact, fly as much as you can before they turn 2 & you have to buy them their own seat!

P.S.  I know sitting in the back of the plane sounds awful… and it also means you’ll be the last ones off.  Don’t worry.. chances are your baby will have JUST fallen asleep about 10 minutes before you landed & your gate-checked stroller is going to take its sweet time making its way out of the cargo hold… so there’s really no rush 😉

 

Here’s my little guy… he’s an easy, seasoned traveler now & has racked up some serious miles over the past 10 years, but he still starts out every flight like this… Safety first! Lol!

 

 

Too Much Good Food!

I ate well last week.  So well in fact, that I think I even gained a few pounds.  My meals covered a wide culinary spectrum from full-on vegan to a Mexican breakfast, to an Italian meal that brought my family roots right to the surface.  All 3 of these restaurants were new to me, they were all very different, and all worthy of a return visit!

GOOD KARMA CAFE – 17 East Front St, Red Bank, NJ, (732) 450-8344
I am not a vegan. I could live without red meat if I had to, but dairy products (including my beloved cheese) hold a very special place in my heart. That being said, I have several close friends, and even my husband at times, who’ve made this dietary commitment. Unfortunately, if you’re vegan, eating out can be quite challenging. If you’re tired of having to read every detail of every menu or having to explain your entire life story to the server, Good Karma will make your life very simple – everything on the menu is vegan.

Screenshot_2016-04-26-10-20-53-1After sampling the Chimichurri Style Seitan Sticks, the Crispy Baked Tempeh Buffalo Wings & the Loaded Nachos (which were amazing), I decided to play it safe and get the “Pad Thai” for my entrée. I have to say that I enjoyed it more than my usual “Thai” Pad Thai. It wasn’t as spicy as I usually like, but it was loaded with vegetables (carrots, cabbage, celery & broccoli) and the peanut tamarind sauce was delicious. Topped with toasted peanuts & beautiful, fresh sprouts, I tried not to feel too guilty about the huge mound of stir-fried rice noodles I also consumed.

My “vegans” enjoyed their meals as well… oohing and aahing over every bite. The only thing Good Karma could improve upon is the ambiance for a nicer in-house dining experience. It’s quite small, but lacking a “cozy” feel. The take-out business was definitely booming though, so maybe that’s the better way to go.


MEEMOM’S

What better place to bring your mom to breakfast than a place called Meemom’s? This was actually the 3rd time I’d tried to eat here, apparently always stopping in at their busiest hours (like on Saturday mornings). This visit with my mom was on a Thursday around 10:30am and luckily we got right in without a wait.  It’s popularity must be due to its extensive, home-cooked breakfast menu (there are 22 varieties of French Toast) & its diverse selection of salads, paninis & wraps for lunch.

2016-04-26 10.43.36I had a hard time narrowing it down, but finally decided on the “Pico de Huevos” – a version of the Mexican dish, huevos rancheros, that sounded delicious. The perfectly poached eggs were served on a grilled cornbread muffin & topped with a chipotle hollandaise sauce. Add chorizo, pico de gallo & sliced avocado to create an amazing combination of flavors and textures. And the side of “spuds” were a pure bonus… who doesn’t enjoy a crisp pile of salted chips? Meemom’s is a definite winner, although I have to add that it took over 30 minutes for our food to arrive and like I mentioned, there is oftentimes a substantial wait. Hopefully you can time it right & enjoy this great breakfast & lunch eatery.


CAPITOLINE

I think I saved my personal favorite for last… Capitoline is the Italian offering in the new “Complex” that has recently branched out from the original Bond Street Bar in Asbury Park. This new, 2 level structure creatively takes up the space of a city block with 3 interconnecting restaurants and 4 bars. Bond Street is still alive & well, serving their delicious burgers & sandwiches in a classic, corner bar atmosphere. Loteria, with its main entrance on Mattison Ave, is a new Mexican taqueria, brought to life with the help of Asbury’s own, well-established Mexican restaurant, Plaza Tapatia.

20160420_095033On this night, however, we were drawn into Capitoline, with its enormous roll-up windows framing the immense wooden door on Cookman Ave.  Inside, an open design, family-style seating & a roaring pizza oven complete the rustic look.  The Italian menu features apps, salads, meatballs and pizza, available in big square slices or full pies.

2016-04-26 10.42.17We started with the Antipasta – a full board of Italian meats, cheeses, bread, olives and roasted peppers. I was in heaven. Next, we went with the “Agrodolce” salad – a delicious blend of baby lettuce, arugula, radicchio, roasted beets & goat cheese with a balsamic vinaigrette – delish. And finally we succumbed to the pizza… the classic Margherita which we jazzed up with some spicy Italian sausage – perfecto!  Add a few beers and the meal was complete – I cannot wait to go back!!!

All 3 restaurants in The Complex offer reasonably priced menu items, which is often hard to find in this downtown strip. The layout is innovative & clever, with doors or halls connecting the separate venues, but with each still embracing its very distinct space & unique theme. The architecture includes salvaged pieces & building materials from many of Asbury’s most historic landmarks, including the Paramount Theater.  “Eat well. Spend little.” is their tag line & it truly fits the bill.  This spot is definitely worth a trip, especially if you can get here before the summer crowds hit!

Day Trip: Adventure Aquarium

If you’re planning a visit to Philadelphia or simply looking for a fun day out with the kids, head to the Camden, NJ waterfront and check out the Adventure Aquarium.  Three full stories of exhibits await you at this hands-on, well laid-out aquatic wonderland.

Come face to face with sharks, sea turtles, sting rays and more in their enormous salt water tank, visit the African hippos and check out 2 very different species of penguins. There’s even a 4D movie if you enjoy getting sprayed in the face & having air blown at the back of your head… lol.

Check out the daily feeding schedules to hear more about the different animals and be sure to bring the kids to all of the “touch tanks” where they can pet sharks, stingrays, starfish and more.

There’s a reasonably priced food court offering the usual chicken fingers, pizza, pretzels, etc, or you can bring in your own lunch & snacks.  We enjoyed eating outside on the patio overlooking the river & the Philadelphia skyline or head out towards “Penguin Island” for another relaxing spot.
